Baked potato soup
Ingredients/Components
- sour cream - 1 c
- salt - 1 tsp
- flour - 2/3 c
- cold milk - 7 c
- margarine - 2/3 c
- pepper - 1 tsp
- shredded Cheddar cheese
- green onions, chopped - 4 item
- potatoes, baked, cooled, peeled and cubed - 4 item
- slices crisp, cooked bacon, crumbled - 12 item
How to make baked potato soup:
In a soup kettle or Dutch oven, melt butter. Stir in flour. Heat and stir until smooth. Gradually add milk, stirring constantly, until thickened. Add potatoes and onions. Bring to a boil, stirring constantly. Reduce heat and simmer 10 minutes. Add bacon, cheese, sour cream, salt and pepper. Stir until cheese is melted.This is a nice, thick and creamy soup which can use up your leftover baked potatoes. Makes 4 to 6 servings.
