Baked mushroom rice
Ingredients/Components
- salt - 1 tsp
- butter, melted - 2 Tbsp
- pepper - 1 tsp
- sliced green onions - 1 c
- chicken broth - 3 c
- dry sherry - 1/2 c
- rice, uncooked - 2 c
- jar chopped pimento, drained - 1 oz
- jar sliced mushrooms, undrained - 1 1/2
How to make baked mushroom rice:
Place rice in a greased 11 x 7 x 1 1/2-inch baking dish. Cook onions, stirring constantly, in skillet until tender. Add broth and remaining ingredients. Bring to boil and pour over rice. Cover and bake at 375° for 25 minutes or until liquid is absorbed and rice is tender. Stir before serving. Yields 8 servings.Recipe categories: Side dish, Mushroom, Rice.
