  • vanilla - 1 tsp
  • water - 2 c
  • baking powder - 1 tsp
  • can coconut milk - 1 oz
  • food coloring optional - 1 item
  • box mochiko - 1 item
  • katakuri potato starch - 1 item

How to make baked mochi:

Mix dry ingredients, except potato starch. Add water and coconut milk gradually until well mixed. Add vanilla and coloring and pour into greased 9 x 13-inch pan. Cover with foil and bake in 350° oven for 1 hour. Do not underbake. In fact, overbak
