Ingredients/Components

  • sugar - 2/3 c
  • salt - 1 tsp
  • flour - 3 Tbsp
  • water
  • cider vinegar - 2/3 c
  • pepper - 1/2 tsp
  • chopped onion - 1 c
  • chopped fresh parsley - 1/3 item
  • chopped celery - 1 c
  • celery seed - 2 tsp
  • diced bacon - 1 c
  • potatoes, boiled, peeled and sliced 1/8-inch thick - 2 qt

How to make baked german potato salad:

Fry bacon until crisp. Drain. Measure drippings and add vegetable oil to make 1/4 cup (if necessary). Return to skillet.

Cook celery and onion for 3 minutes over medium heat. Add flour, salt and pepper; cook 2 minutes longer. Add sugar, vinegar and water all at once. Stirring with a whisk, bring to a boil and cook 1 minute. Add parsley, celery seed and bacon. Combine; remove from heat.

Preheat oven to 375°. Place potatoes in oiled 13 x 8 x 2-inch casserole and pour dressing over. Mix gently. Bake for 45 minutes or until middle of casserole bubbles.
