Baked german potato salad
Ingredients/Components
- sugar - 2/3 c
- salt - 1 tsp
- flour - 3 Tbsp
- water
- cider vinegar - 2/3 c
- pepper - 1/2 tsp
- chopped onion - 1 c
- chopped fresh parsley - 1/3 item
- chopped celery - 1 c
- celery seed - 2 tsp
- diced bacon - 1 c
- potatoes, boiled, peeled and sliced 1/8-inch thick - 2 qt
How to make baked german potato salad:
Fry bacon until crisp. Drain. Measure drippings and add vegetable oil to make 1/4 cup (if necessary). Return to skillet.Cook celery and onion for 3 minutes over medium heat. Add flour, salt and pepper; cook 2 minutes longer. Add sugar, vinegar and water all at once. Stirring with a whisk, bring to a boil and cook 1 minute. Add parsley, celery seed and bacon. Combine; remove from heat.
Preheat oven to 375°. Place potatoes in oiled 13 x 8 x 2-inch casserole and pour dressing over. Mix gently. Bake for 45 minutes or until middle of casserole bubbles.
