Ingredients/Components

  • sugar - 2/3 c
  • salt - 1 tsp
  • water
  • all-purpose flour - 3 Tbsp
  • cider vinegar - 2/3 c
  • chopped onion - 1 c
  • chopped celery - 1 c
  • black pepper - 1/2 tsp
  • celery seed - 2 tsp
  • chopped, fresh parsley - 1/3 c
  • diced bacon, fried crisp - 1 c
  • potatoes, boiled, peeled and slice 1/8 inch thick red potatoes are ideal - 2 qt

How to make baked german potato salad:

Fry bacon until crisp; remove and add onion and celery. Cook over medium heat 3 minutes. Add flour, salt and pepper. Cook 2 minutes. Add sugar, vinegar and water; stir with a whisk. Bring to a boil and cook 1 minute. Add parsley, celery seed and bacon. Remove from heat. Place potatoes in dish sprayed with vegetable spray. Pour dressing over all, being careful not to break the potatoes. Bake for 45 minutes at 350° until bubbly.
