Ingredients/Components
- butter - 1/3 c
- eggs, beaten - 2 item
- can cream of mushroom soup - 1 item
- cracker crumbs - 1 c
- large onion, diced - 1 item
- eggplant - 1 item
How to make baked eggplant:
Peel eggplant and dice into 1-inch cubes. Cook in salt water until very tender. Brown onion in butter. Mix all ingredients together. Pour into greased baking dish. Bake in slow oven about 30 to 40 minutes.Recipe categories: Vegetables, Main dish, Eggplant.
