Ingredients/Components
- milk - 1/2 c
- melted butter - 2 Tbsp
- beaten egg - 1 item
- dry bread crumbs - 1 c
- small chopped onion - 1 item
- medium eggplant - 1 item
How to make baked eggplant:
Pare eggplant; cut in 1 inch squares. Cook in boiling salted water 8 minutes. Add egg, milk, butter, onion and dry bread crumbs. Place in greased 1 quart buttered dish. Top with buttered crumbs. Bake at 350° for 30 minutes.Recipe categories: Vegetables, Main dish, Eggplant.
