Ingredients/Components
- bread crumbs - 1 item
- Mozzarella cheese, shredded - 1 lb
- salt and pepper to taste - 1 item
- olive oil - 1/2 c
- eggplant - 2 item
- or 3 eggs - 2 item
- Romano cheese - 1 item
How to make baked eggplant:
Peel and slice eggplant. Dip into egg, then bread crumbs. Fry in oil on both sides until golden brown. Remove and place on paper towels.In baking dish, layer tomato sauce, eggplant, Mozzarella cheese and repeat again. Sprinkle with Romano cheese, cover with foil and bake for 45 minutes at 350°. May be served with pasta or alone.
