  • mayonnaise - 1 item
  • eggplant - 1 item
  • seasoned crumbs - 1 item

How to make baked eggplant:

Put 2 tablespoons cooking oil in baking pan and place in a 400° oven to heat. Peel and slice eggplant into 3/4-inch slices. Soak in salted water 15 minutes; drain. Spread each side with mayonnaise and bread with seasoned bread crumbs. Place in the heated pan. Bake at 400° for 10 minutes. Turn and bake 10 minutes more.
