Baked egg rolls
Ingredients/Components
- sugar - 4 tsp
- pkg - 2 lb
- salt
- cornstarch - 4 tsp
- vinegar - 1/2 c
- soy sauce - 2 Tbsp
- can sliced mushrooms - 1 oz
- celery, chopped - 2 c
- sesame oil - 4 tsp
- sherry - 8 Tbsp
- tomato catsup - 3 Tbsp
- can water chestnuts, sliced - 1 oz
- bunches green onions, chopped - 2 item
- cornstarch, dissolved in 1/2 c - 2 Tbsp
- boneless chicken, chopped - 2 lb
- American cabbage, shredded - 2 lb
- peeled shrimp, chopped - 1/4 lb
- spinach, shredded - 10 oz
- carrots 8 oz - 3 c
- cloves garlic or less, crushed - 8 item
- Saute in hot wok with about 2 tablespoons of oil until meat is done
How to make baked egg rolls:
Marinade:2 tsp. salt4 tsp. sesame oil4 tsp. sugar8 cloves garlic or less, crushed8 Tbsp. sherry4 tsp. cornstarch Marinate meat at least 20 minutes. Saute in hot wok with about 2 tablespoons of oil until meat is done. Add rest of vegetables. Toss until all vegetables are mixed with meat. Toss an additional minute. Immediately remove to a colander to cool. Place colander in a pie plate or dish so that all juices are allowed to drain. This usually takes several hours in the refrigerator. Place 2 tablespoons of filling on wrapper diagonally. Fold over corner to the middle. Beat 1 egg. With fingers, spread beaten egg on 2 side corners. Fold 2 side corners to center and seal tightly. Spread beaten egg over other 2 edges. Roll into a neat package and seal tightly. Spray a cookie sheet with vegetable cooking spray. Place egg rolls on cookie sheet seam side down. Spray tops with vegetable cooking spray.Bake in a preheated 350° oven until light golden brown. This usually takes 20 to 30 minutes. After 10 to 15 minutes of baking, turn egg rolls over. Spray with vegetable cooking spray.Sweet Sour Sauce:1/2 c. sugar1/2 c. vinegar2 Tbsp. soy sauce2 Tbsp. sherry3 Tbsp. tomato catsup2 Tbsp. cornstarch, dissolved in 1/2 c. water Place the sugar, vinegar, soy sauce, sherry and tomato catsup in a heavy saucepan. Bring to a boil and add cornstarch mixture, stirring constantly until the sauce is thickened.
