Baked coconut shrimp
Ingredients/Components
- salt - 1/2 tsp
- butter - 4 Tbsp
- eggs, beaten - 2 item
- all-purpose flour - 2/3 c
- lime juice - 3 Tbsp
- curry powder - 2 tsp
- prepared mustard - 1/2 Tbsp
- orange marmalade - 2/3 c
- horseradish - 1/3 c
- medium shrimp - 1 lb
- grated unsweetened coconut - 1/2 c
How to make baked coconut shrimp:
Combine eggs, lime juice, mustard, curry and salt in a bowl. Dip shrimp into flour, then coat with egg mixture. Roll in coconut. Melt butter and pour onto baking sheet. Bake 5 to 7 minutes in a 350° oven, turning once at 3 to 5 minutes.A dipping sauce of 1/3 cup horseradish mixed with 2/3 cup orange marmalade makes an excellent garnish.
