  • milk
  • salt - 1 tsp
  • flour - 1/2 c
  • butter - 2 Tbsp
  • eggs, beaten - 2 item
  • vegetable oil - 1 Tbsp
  • pepper - 1/4 tsp
  • oregano - 1/4 tsp
  • grated Mozzarella - 1 c
  • dried basil - 1/4 tsp
  • boneless skinless chicken breasts - 4 item
  • dry breadcrumbs - 3/4 c
  • prepared tomato sauce - 3/4 c
  • grated Parmesan, divided - 1/2 c

How to make baked chicken parmesan:

Pat chicken dry and pound to flatten slightly. Dust chicken with 1/2 cup flour and dip into eggs. Combine breadcrumbs with 1/4 cup Parmesan and pat mixture onto chicken. Line 9 x 13-inch pan with foil; brush with oil. Arrange chicken in dish in a single layer. Bake for 20 minutes at 400°.

Meanwhile, in medium-sized saucepan, melt butter and whisk in 2 tablespoons flour. Cook, without browning, 3 minutes. Whisk in milk and bring to a gentle boil. Add salt, pepper, basil and oregano. Reduce heat. Cook 5 minutes, stirring often.

Spread some of the creamy sauce on each piece of chicken. Drizzle with tomato sauce. Sprinkle with grated Mozzarella and remaining Parmesan. Bake 15 to 20 minutes longer.

This dish can be baked ahead and reheated, covered, at 350° for 15 to 20 minutes.
