Baked caramel corn
Ingredients/Components
- vanilla - 1 tsp
- salt - 1 tsp
- baking soda - 1/2 tsp
- firmly packed brown sugar - 2 c
- light or dark corn syrup - 1/2 c
- butter 2 sticks - 1 c
- unsalted, popped corn - 6 qt
How to make baked caramel corn:
Place popped corn in a large bowl that will allow it to be stirred. Set aside. In a saucepan, melt butter, then stir in brown sugar, corn syrup and salt. Bring to a boil, stirring constantly. Allow it to boil 5 minutes without stirring. Remove from heat and stir in soda and vanilla. Gradually pour mixture over popped corn. Mix well.Turn corn into 2 large, shallow baking pans. Bake for one hour at 250° and stir every 15 minutes. Remove from oven. Cool completely and break apart.
Note: The long, slow baking makes this crisp and delicious.
