  • vanilla - 1 tsp
  • butter or margarine - 1 c
  • salt - 1 tsp
  • baking soda - 1/2 tsp
  • firmly packed brown sugar - 2 c
  • popped corn - 6 qt
  • light or dark corn syrup - 1/2 c

How to make baked caramel corn:

Melt butter or margarine; stir in brown sugar, corn syrup and salt. Bring to a boil stirring constantly. Boil without stirring for 5 minutes. Remove from heat; stir in soda and vanilla. Gradually pour over popped corn. Mix well. Turn into a large shallow pan. Bake in 250° oven 1 hour, stirring every 15 minutes. Remove from oven. Cool completely. Break apart and place in tightly covered container. Makes about 5 quarts.
