Baked butternut squash
Ingredients/Components
- salt - 1/2 tsp
- nutmeg - 1/8 tsp
- pepper - 1 item
- sweet butter - 1 Tbsp
- large shallots, minced - 2 item
- fresh parsley leaves, minced - 1/4 c
- , peeled and seeded - 1 small
How to make baked butternut squash:
Butter a 1-quart baking dish; set aside. Position rack in center of oven and preheat to 350°. Using food processor, slice squash thinly. Melt butter in large skillet over medium heat. Add shallots and saute until softened, about 5 minutes. Stir in squash; add salt, nutmeg and pepper to taste and cook 3 more minutes. Transfer to prepared dish. (Can be prepared ahead to this point; cover and chill.) Bake covered for 45 minutes. Add parsley and toss lightly. Adjust seasoning. Serves 4.Recipe categories: Squash, Side dish, Vegetables.
