Ingredients/Components
- ripe, unblemished avocados - 4 item
- chicken broth - 3 c
- sour cream - 1 c
- salt and white pepper to taste - 1 item
How to make avocado soup:
Peel and pit avocados and cut into pieces. Put flesh of avocados into container of blender or food processor. Add a little chicken broth to aid processing. When very smooth, pour and scrape avocado into a bowl. Add chicken broth, sour cream and seasonings; blend well. May be strained through a fine sieve for an even smoother soup.
