Avocado egg salad
Ingredients/Components
- lemon juice - 2 tsp
- mayonnaise or salad dressing - 2 Tbsp
- salt to taste - 1 item
- minced onion - 1 Tbsp
- strips bacon, fried, drained and crumbled - 4 item
- hard-cooked shelled eggs, diced - 4 item
- large avocados, halved and pitted - 2 item
- bottled mustard or to taste - 1/2 tsp
How to make avocado egg salad:
Combine eggs, bacon and onion. Cut and scoop avocado pulp and mash with a fork or large plate. Stir in mayonnaise, lemon juice, prepared mustard and salt. Add egg mixture; spoon into pretty glass cups. Garnish with leaf of lettuce.For a family of two, just make half the recipe.
