Ingredients/Components

  • salt - 1 tsp
  • hot water - 4 c
  • pepper - 1/4 tsp
  • bay leaf - 1 item
  • thinly sliced carrots - 1 c
  • dried basil leaves - 1/2 tsp
  • lean ground beef or turkey - 1 lb
  • 1/2-inch potato cubes - 2 c
  • chopped onion and chopped celery - 1 c
  • tomatoes, cut into eighths and sliced in half - 3 item

How to make autumn soup:

Mix meat, onion and celery in 5-quart casserole. Microwave at High until meat loses its pink color, about 5 to 7 minutes, stirring after half the cooking time. Add hot water, potatoes, carrots, salt, basil, pepper and bay leaf. Cover and microwave at High until potatoes are tender, 18 to 20 minutes. Add tomatoes and microwave at High until tomatoes are tender, about 8 to 10 minutes.
