Ingredients/Components

  • salt - 1 tsp
  • honey - 1 tsp
  • salad oil - 1/2 c
  • dry mustard - 1 tsp
  • lemon or lime juice - 1/3 c
  • clove garlic - 1/2 item
  • olive oil - 1/2 c
  • mixed herbs parsley, chives, etc - 1 2

How to make asparagus vinaigrette:

Blend in blender 15 seconds. Cover and refrigerate at least 2 hours. Shake. Keeps well. Yields 1 1/2 cups.

Cook asparagus until tender, then plunge into ice water to preserve color. Arrange asparagus on serving plate; add large dollop of Vinaigrette.
