Asparagus vinaigrette
Ingredients/Components
- salt - 1 tsp
- honey - 1 tsp
- salad oil - 1/2 c
- dry mustard - 1 tsp
- lemon or lime juice - 1/3 c
- clove garlic - 1/2 item
- olive oil - 1/2 c
- mixed herbs parsley, chives, etc - 1 2
How to make asparagus vinaigrette:
Blend in blender 15 seconds. Cover and refrigerate at least 2 hours. Shake. Keeps well. Yields 1 1/2 cups.Cook asparagus until tender, then plunge into ice water to preserve color. Arrange asparagus on serving plate; add large dollop of Vinaigrette.
