Asparagus vinaigrette
Ingredients/Components
- salt - 1/8 tsp
- lemon juice - 1 Tbsp
- Dijon mustard - 1/2 tsp
- chopped green onions - 1 Tbsp
- fresh asparagus - 1 lb
- clove garlic, pressed - 1 item
- dried tarragon, crushed - 1/2 tsp
- tarragon wine or white wine vinegar - 1/3 c
- lemon rind rings garnish - 1 item
How to make asparagus vinaigrette:
Snap off tough ends of asparagus. Remove scales with a vegetable peeler or knife, if desired. Cook asparagus, covered, in boiling water 5 minutes. Drain and place in a shallow dish. Combine vinegar and next 6 ingredients; pour over asparagus. Cover and chill 8 hours. Remove from marinade and, if desired, serve in "bundles" in lemon rind rings.
