Asparagus vinaigrette
Ingredients/Components
- pkg - 24 fresh
- olive oil or vegetable oil - 1/3 c
- red wine vinegar - 3 Tbsp
- clove garlic, minced - 1 item
- salt - 1/2 tsp
- dry mustard - 1/2 tsp
- basil, crushed - 1/4 tsp
- pepper - 1/8 tsp
- dash of sugar - 1 item
How to make asparagus vinaigrette:
Blanch cook fresh asparagus until crisp-tender and rinse under cold water. If using frozen spears, thaw and drain well.Vinaigrette: Combine oil and remaining ingredients in a small bowl. Stir until well blended.
Place asparagus on serving platter. Pour vinaigrette over spears. Cover and chill 2 hours or until serving time, turning occasionally.
