Ingredients/Components

  • asparagus, cut - 4 c
  • butter or margarine - 1/2 c
  • dry thyme - 1/2 tsp
  • oregano - 1 tsp
  • clove garlic, minced - 1 item
  • flour mixed with 1 tsp - 2 3
  • pepper to taste - 1 item
  • chicken broth - 2 c
  • white cooking sherry - 1/2 c
  • milk - 2 c

How to make asparagus soup:

In a pot melt butter. Add oregano, thyme, garlic and asparagus. Simmer 10 minutes. Add flour, salt and pepper and mix thoroughly. Cool 2 minutes, then add broth. Stir and simmer until thick. Add wine and milk and allow to come to boil. Remove from heat. Serves 6 to 8.
