Asparagus salad
Ingredients/Components
- tsp salt - 1/2 item
- 4-6 Tbsp lemon juice
- pinch sugar - 1 item
- to 1 cup chicken broth - 1/2 item
- Tbsp minced onion - 1 item
- minced chives and parsley to taste - 1 item
- cooked, hot asparagus preferably white - 1 item
- 3-4 Tbsp olive or salad oil
- hard cooked eggs, quartered, sliced or chopped - 1 item
- Lettuce and optional garnishes - 1 item
How to make asparagus salad:
Combine first 6 ingredients and shake well. Pour over freshly cooked, drained asparagus while hot and let stand at room temperature 15 minutes. Add oil; toss lightly taking care not to break asparagus; let stand at room temperature about 30 minutes longer, then chill until serving time. Drain and serve on a bed of lettuce garnished with hard cooked egg and other garnishes as desired (such as tomato wedges, capers, sprigs of fresh parsley).Recipe categories: Salads, Vegetables, Asparagus.
