Asparagus casserole
Ingredients/Components
- milk - 2 c
- flour - 3 Tbsp
- butter
- slivered almonds - 1 c
- Velveeta - 1 c
- roll Ritz crackers - 1 item
- to 4 hard-boiled eggs, cut up - 3 item
- fresh asparagus or 1 qt - 1 lb
How to make asparagus casserole:
Cheese Sauce:4 Tbsp. butter3 Tbsp. flour2 c. milk1 c. Velveeta Spray 9 x 13-inch dish with cooking spray. Crush Ritz crackers and put in bottom of dish (no butter). Cook asparagus until crisp-tender (2 to 3 minutes). Place over crushed crackers, followed by almonds, then eggs. Prepare cheese sauce as follows: Melt butter. Add flour and stir. When smoother, add milk, followed by Velveeta cheese. Cook over medium heat until thick. Pour over asparagus, almonds and eggs. Top with 1/2 to 1 roll crushed Ritz crackers.
