  • milk - 2 c
  • flour - 3 Tbsp
  • butter
  • slivered almonds - 1 c
  • Velveeta - 1 c
  • roll Ritz crackers - 1 item
  • to 4 hard-boiled eggs, cut up - 3 item
  • fresh asparagus or 1 qt - 1 lb

How to make asparagus casserole:

Cheese Sauce:4 Tbsp. butter3 Tbsp. flour2 c. milk1 c. Velveeta Spray 9 x 13-inch dish with cooking spray. Crush Ritz crackers and put in bottom of dish (no butter). Cook asparagus until crisp-tender (2 to 3 minutes). Place over crushed crackers, followed by almonds, then eggs. Prepare cheese sauce as follows: Melt butter. Add flour and stir. When smoother, add milk, followed by Velveeta cheese. Cook over medium heat until thick. Pour over asparagus, almonds and eggs. Top with 1/2 to 1 roll crushed Ritz crackers. Bake at 350° for 25 to 30 minutes.
