Artichoke nibbles



  • eggs - 4 item
  • bread crumbs - 1/4 c
  • small onion, finely chopped - 1 item
  • minced parsley - 2 Tbsp
  • clove garlic, minced or pressed - 1 item
  • jars marinated artichoke hearts, chopped - 2 oz
  • each salt, pepper and oregano leaves - 1/8 tsp
  • sharp Cheddar cheese, grated about 2 c - 1/2 lb

How to make artichoke nibbles:

Drain liquid from 1 jar artichoke hearts into a frying pan. Drain liquid from other jar and save for other uses. Saute onion and garlic until limp. Beat eggs with a fork in a large bowl. Add crumbs, salt, pepper, oregano, cheese, parsley, artichoke
