Artichoke frittata
Ingredients/Components
- jars marinated artichoke hearts, chopped - 2 item
- small onion, chopped - 1 item
- clove garlic, minced - 1 item
- eggs - 4 item
- fine dry bread crumbs - 1/4 c
- salt - 1/4 tsp
- pepper - 1/8 tsp
- oregano or basil - 1/4 tsp
- Tabasco - 1/8 tsp
- 2 c - 1/2 lb
- minced parsley - 2 Tbsp
How to make artichoke frittata:
Drain artichoke hearts and reserve marinade. Saute artichoke hearts, onion and garlic in 1 tablespoon of marinade. Beat eggs in a bowl. Add bread crumbs, salt, pepper, oregano and Tabasco. Stir in cheese, parsley and artichoke/onion mixture. Turn into pan and bake 25 to 30 minutes at 350°. When toothpick comes out clean, it is done.Pan: 8 x 8-inch equals 1 recipe, 7 x 11-inch equals 1 1/2 recipes and 9 x 13-inch equals 2 recipes.
