Ingredients/Components

  • eggs - 4 item
  • salt - 1/2 tsp
  • pepper - 1/8 tsp
  • chopped onion - 1/2 c
  • bread crumbs - 1/4 c
  • shredded Cheddar cheese - 1/4 lb
  • oregano - 1/4 tsp
  • olive oil - 2 Tbsp
  • minced parsley - 2 Tbsp
  • Tabasco sauce - 1/8 tsp
  • can artichoke hearts - 1 oz
  • clove mashed garlic - 1 item

How to make artichoke frittata:

Saute onion and garlic in oil until limp. Remove from heat. Drain and chop artichoke hearts; add to onion and garlic. Beat eggs; add to mixture. Add remaining ingredients and mix well. Pour into greased 7 x 11-inch pan. Bake at 350° for 1/2 hour. Let cool; cut into squares. Good for parties or holidays as appetizers.
