Apricot streusel bars
Ingredients/Components
- sugar - 1 c
- vanilla - 1 tsp
- flour - 2 c
- dried apricots - 12 oz
- quick oats - 2 c
- Egg Beaters - 1 item
- jars baby food prunes - 2 item
- margarine reduced-fat - 1/4 c
How to make apricot streusel bars:
Bring apricots and 2 cups water to a boil. Cover and simmer 40 minutes. Drain and reserve 1/4 cup liquid. Cool slightly. Puree apricots and reserved liquid and 1/4 cup sugar; set aside.Cut margarine into flour until mixture is crumbly. Stir in oats, baking soda and 3/4 cup sugar. Mix together prunes, Egg Beaters and vanilla. Stir into oat mixture to form a moist crumbly mixture. Spray 13 x 9-inch pan with Pam. Press 3 cups of crumb mixture firmly into bottom of pan. Bake at 375° for 10 minutes. Spread apricot mixture over crust. Sprinkle remaining crumbs over filling. Pat gently. Bake 20 to 25 minutes.
