Ingredients/Components
- gelatin - 2 Tbsp
- fresh lemon juice - 1/4 c
- apricot nectar - 3 c
- diced fresh fruits, well drained Bartlett pears, grapes, bananas, Bing cherries, peaches, blueberries, etc - 4 c
- grated rind of 2 lemons
How to make apricot salad:
Sprinkle gelatin over 1/2 cup cold nectar. Heat remaining nectar. Pour over gelatin. Stir in lemon juice. Cool until mixture thickens. Place fruits in mold or pan. Fill with gelatin-nectar mixture. Poppy seed dressing is great with it!Recipe categories: Fruit, Low sodium, Salads.
