Ingredients/Components

  • sugar - 1 c
  • flour - 1/4 c
  • butter - 1 Tbsp
  • lemon juice - 1 Tbsp
  • nutmeg optional - 1/8 tsp
  • pastry for double crust pie - 1 item
  • sliced apricots fresh or frozen - 4 c

How to make apricot pie:

In large bowl, sprinkle apricots with lemon juice. Combine sugar, flour and nutmeg. Add sugar mixture to apricots; toss to coat fruit. Fill a pastry-lined 9-inch pie plate with apricot mixture; dot with butter. Put on top crust. Seal and flute edge. Bake at 375° for 20 minutes. Check to see if crust is browning. If brown, cover edges with foil and bake at 375° for another 25 minutes until golden brown. Cool on rack before serving.
