Apricot oatmeal bars
Ingredients/Components
- sugar - 1/2 c
- vanilla - 2 tsp
- salt - 1/4 tsp
- flour
- flaked coconut - 1/2 c
- baking soda - 1/2 tsp
- butter or margarine, melted - 3/4 c
- quick cooking oats
- jar apricot preserves or your favorite preserves
How to make apricot oatmeal bars:
Filling:1 (10 oz.) jar apricot preserves or your favorite preserves1/2 c. flaked coconut Heat oven to 350°.Crumb Mixture: In large mixer bowl, combine all ingredients; beat at low speed, scraping bowl often, until mixture is crumbly, 1 to 2 minutes. Reserve 1 cup crumb mixture. Press remaining crumb mixture into greased 13 x 9-inch baking pan.
Filling: Spread apricot preserves to within 1/2 inch from edge of crumb mixture; sprinkle with reserved crumb mixture and coconut. Bake for 22 to 27 minutes, or until edges are lightly browned. Cool completely; cut into bars. Makes 3 dozen bars.
