  • eggs - 4 item
  • confectioners sugar
  • lemon extract - 4 tsp
  • corn oil - 3/4 c
  • box yellow cake mix - 1 item
  • juice of 2 lemons
  • grated lemon rinds - 2 item
  • apricot nectar find in the juice section of store - 3/4 c

How to make apricot nectar cake:

Icing:1 1/2 c. confectioners sugar juice of 2 lemons2 grated lemon rinds Mix together the cake mix, corn oil, apricot nectar, eggs and lemon extract; mix thoroughly. Pour out into a greased and floured 13 x 9-inch baking pan. Bake for 30 to 35 minutes or until sides break away from cake pan. Leave the cake in the pan.

For icing mix the confectioners sugar, juice and lemon rinds; mix thoroughly. Cut slits in cake (still in the pan) and spoon icing over cake. Cover in foil and cool at least 1 hour before removing from pan.
