Ingredients/Components

  • self-rising flour - 2 c
  • sugar - 2 c
  • each cinnamon, nutmeg and allspice - 1 tsp
  • salad oil - 1 c
  • eggs - 3 item
  • junior size jar apricots with tapioca can use prunes or plums - 1 item
  • chopped nuts - 1 c
  • frozen orange juice approximately
  • powdered sugar enough to make thin glaze - 1 item

How to make apricot cake:

Glaze:2 Tbsp. frozen orange juice (approximately) powdered sugar (enough to make thin glaze) Mix oil and sugar, then eggs. Mix spices with flour; add part of flour mixture, then apricots with tapioca, remaining flour and mix well. Fold in nuts and bake in greased and floured Bundt pan. Preheat oven to 350° and bake 45 minutes to 1 hour until done. While still warm, pour orange glaze over cake.
