Ingredients/Components
- granulated sugar - 1/2 c
- salt - 1/4 tsp
- baking soda - 1/4 tsp
- all-purpose flour - 2 c
- lemon juice - 1 Tbsp
- apricot preserves - 3/4 c
- firmly packed light brown sugar - 1/3 c
- butter, at room temperature - 3/4 c
How to make apricot bars:
Preheat oven to 375°. Grease 9-inch square pan. In medium bowl, beat butter until creamy. Stir in sugar and brown sugar. Add flour, salt and baking soda. Stir until mixture is crumbly. Set aside 1 cup of crumb mixture for top. Press remaining mixture into pan. Stir lemon juice into apricot preserves. Spread into pan, leaving a 4-inch border around all edges. Sprinkle preserves with remaining 1 cup crumb mixture. Bake 35 to 40 minutes until browned.Recipe categories: Desserts, Cookie and brownie, Bar cookie.
