  • sugar - 2/3 c
  • eggs - 2 item
  • salt - 1/2 tsp
  • buttermilk - 1/4 c
  • baking powder - 1 tsp
  • baking soda - 1/2 tsp
  • all-purpose flour
  • chopped walnuts - 1/2 c
  • butter or margarine, softened - 1/3 c
  • 100% bran cereal not flakes - 1 c
  • mashed ripe bananas 2 to 3 medium - 1 c
  • chopped dried apricots about 6 oz - 3/4 c

How to make apricot banana bread:

In a mixing bowl, cream butter and sugar. Add eggs; mix well. Combine bananas and buttermilk. Combine the flour, baking powder, baking soda and salt; add to creamed mixture alternately with banana mixture. Stir in bran, apricots and nuts. Pour into a greased 9 x 5 x 3-inch loaf pan. Bake at 350° for 55 to 60 minutes or until bread tests done. Cool 10 minutes before removing from a pan to a wire rack. Yield: 1 loaf.
