Apricot banana bread
Ingredients/Components
- sugar - 2/3 c
- eggs - 2 item
- salt - 1/2 tsp
- buttermilk - 1/4 c
- baking powder - 1 tsp
- baking soda - 1/2 tsp
- all-purpose flour
- chopped walnuts - 1/2 c
- butter or margarine, softened - 1/3 c
- 100% bran cereal not flakes - 1 c
- mashed ripe bananas 2 to 3 medium - 1 c
- chopped dried apricots about 6 oz - 3/4 c
How to make apricot banana bread:
In a mixing bowl, cream butter and sugar. Add eggs; mix well. Combine bananas and buttermilk. Combine the flour, baking powder, baking soda and salt; add to creamed mixture alternately with banana mixture. Stir in bran, apricots and nuts. Pour into a greased 9 x 5 x 3-inch loaf pan. Bake at 350° for 55 to 60 minutes or until bread tests done. Cool 10 minutes before removing from a pan to a wire rack. Yield: 1 loaf.Recipe categories: Breads, Breakfast, Quick breads.
