  • chopped onion - 1/2 c
  • bread crumbs - 1 c
  • medium apples - 2 item
  • apple cider
  • dried thyme - 1/2 tsp
  • light margarine - 2 Tbsp
  • Dash and pepper to taste
  • thin sliced breast parts - 1 pkg
  • currants, soaked in 1 Tbsp - 2 Tbsp

How to make apple stuffed chicken breasts:

Sprinkle breasts lightly with thyme, Mrs. Dash and pepper. Peel, core and dice apples. In large, nonstick skillet over medium heat, melt 1 tablespoon margarine. Add apples and onion and saute until soft, about 5 minutes. Stir in bread crumbs and moisten with 3 tablespoons cider. Add currants and sherry. Remove from pan and cool.

Preheat oven to 350°. Fill breast slices with thin layer; roll up, securing with a toothpick. Saute chicken in remaining margarine over medium heat, turning until all sides are lightly browned. Remove from pan and place in a baking dish.

Stir cider into skillet and cook over high heat until liquid is reduced to about 1/2 cup. Pour cider mixture over chicken and bake for 20 minutes, until firm to the touch, basting frequently with pan juices.
