Apple streusel muffins
Ingredients/Components
- sugar - 2 c
- cinnamon - 1/2 tsp
- salt - 1/2 tsp
- flour
- butter - 4 tsp
- baking soda - 1 tsp
- vegetable oil - 1/2 c
- pumpkin pie spice - 1 Tbsp
- canned pumpkin - 1 c
- eggs, slightly beaten - 2 item
- apples, peeled and chopped - 2 item
How to make apple streusel muffins:
Topping:3 Tbsp. flour1/2 c. sugar1/2 tsp. cinnamon4 tsp. butter In a bowl, combine flour, sugar, pumpkin pie spice, baking soda and salt. Set aside.In another bowl, combine eggs, pumpkin and oil. Add liquid ingredients to dry ingredients. Stir just until mixed. Stir in apples. Spoon batter into paper lined muffin cups, filling each 3/4 of the way full.
Mix together topping ingredients. Sprinkle equal amounts over the batter in each muffin cup. Bake at 350° for 35 to 40 minutes.
