Ingredients/Components

  • butter - 3 Tbsp
  • firmly packed brown sugar - 2/3 c
  • apples, pared, cored and sliced very thin - 3 c
  • raisins optional - 1/3 c
  • Pet milk canned, undiluted - 2/3 c
  • egg whites - 2 item
  • sifted flour
  • double-acting baking powder - 2 tsp
  • salt - 1/2 tsp
  • sugar - 1/4 c
  • brown sugar - 2/3 c
  • Crisco - 1/3 c
  • egg yolks - 2 item
  • vanilla - 1 tsp

How to make apple skillet cake:

May also be used with canned pineapple, drained.

Melt butter in heavy skillet (10-inches across top). Remove from heat and add 2/3 cup brown sugar. Arrange apples in skillet. Add raisins.

Sift together flour, baking powder and salt. Set aside. Add sugars gradually to Crisco, creaming well. Blend in egg yolks and vanilla; beat well. Add the dry ingredients alternately with milk, beginning and ending with dry ingredients. Blend thoroughly after each addition.

Beat 2 egg whites until stiff, but not dry. Fold into batter. Pour batter over apples in skillet. Bake at 350° for 35 to 45 minutes. Turn out of skillet immediately.

You may use self-rising flour (omit baking powder and salt). Increase baking time to 40 to 50 minutes.
