Apple salad
Ingredients/Components
- sugar - 1/4 c
- cornstarch - 2 Tbsp
- 1/2 stick butter
- lemon juice - 1 Tbsp
- chopped fresh parsley - 1/2 c
- chopped celery - 1 c
- mayonnaise - 1 c
- can pineapple chunks - 1 oz
- chopped red-skinned tart apples i - 2 qt
- green seedless grapes, halved or 1 c - 2 c
- toasted pecans or almonds, sliced
How to make apple salad:
Dressing:1/4 c. (1/2 stick) butter1/4 c. sugar1 Tbsp. lemon juice2 Tbsp. cornstarch1 c. mayonnaise Drain the pineapple, reserving the juice and set chunks aside.Prepare the dressing. In a small saucepan, combine the pineapple juice, butter, sugar and lemon juice; bring to a boil over medium heat. In a small bowl, combine the cornstarch and enough water to make a smooth mixture. Add to the bubbling juice. Reduce heat and cook until mixture is thick and smooth. Chill. Whisk in the mayonnaise. (This can be done a day in advance.) Place the pineapple chunks and the rest of the salad ingredients in a large bowl. Toss well, then mix in the chilled dressing. Serves 10 to 12.
