Ingredients/Components

  • sugar - 2 c
  • cinnamon - 2 tsp
  • half and half - 2 Tbsp
  • vanilla - 1 tsp
  • salt - 3/4 tsp
  • chopped nuts - 1 c
  • oil - 1/2 c
  • soda - 2 tsp
  • eggs, beaten - 2 item
  • dash of salt - 1 item
  • sifted flour - 2 c
  • sifted confectioners sugar - 4 c
  • lemon juice - 1 item
  • grated lemon peel - 1 tsp
  • chopped apple - 4 c
  • soft butter or margarine - 1/2 c
  • yellow food color optional - 1 item
  • Lemon Cheese Icing - 1 item
  • Beat in the oil until smooth
  • unpeeled, thin apple slices - 1 item

How to make apple nut cake:

Beat together the eggs, sugar and vanilla. Beat in the oil until smooth. Sift together the flour, soda, cinnamon and salt. Stir dry ingredients into egg mixture. Add nuts and apple and mix well. Turn into a greased and floured 11 x 7-inch pan and bake at 325° for 1 hour. Cool cake in pan or on a rack and spread smoothly with icing.Lemon Cheese Icing:1 (3 oz.) pkg. cream cheese2 Tbsp. half and half1/2 c. soft butter or margarine4 c. sifted confectioners sugar1 tsp. grated lemon peel1 tsp. vanilla dash of salt yellow food color (optional) unpeeled, thin apple slices lemon juice Soften cream cheese at room temperature. Add half and half, butter, sugar, lemon juice and peel, vanilla and salt. Beat until fluffy. Tint pale yellow with food coloring, if you wish, blending well. Add a little more sugar or cream if necessary for good spreading consistency. Garnish with apples dipped in lemon juice or chopped nuts.
