Apple chicken
Ingredients/Components
- cornstarch - 3 Tbsp
- water - 1/2 c
- garlic powder - 1/2 tsp
- unsweetened apple juice - 3/4 c
- thyme leaves - 1/4 tsp
- chicken breasts
- black pepper to taste - 1 item
- large onion, sliced thin - 1 item
- shredded Jarlsberg cheese - 3/4 c
- dry sherry or cooking wine - 1/3 c
- minced parsley or parsley flakes - 1 Tbsp
- large Granny Smith or other tart apples, peeled, cored and sliced - 3 item
How to make apple chicken:
Season chicken with pepper to taste. Spray a large skillet with vegetable cooking spray; brown the chicken well on both sides. Add onion and garlic; saute for 3 minutes. Add apple juice, sherry, parsley and thyme; cover and simmer 10 minutes. Add apples; cover and cook 10 minutes longer or until chicken is tender. Blend cornstarch and water; stir into sauce in skillet. Heat to boiling, stirring. Spoon contents of skillet into broiler-proof casserole. Sprinkle with the shredded cheese. Broil 2 to 3 minutes or until the cheese is bubbly. Serve with peas and carrot. Serves 6.Recipe categories: Chicken, Main dish, Chicken breast.
