Ingredients/Components

  • sugar - 1/3 c
  • milk - 1 qt
  • salt - 1 Tbsp
  • baking powder - 1 Tbsp
  • baking soda - 1 tsp
  • all-purpose flour - 5 c
  • ground nutmeg - 1/2 tsp
  • dash of hot pepper sauce - 1 item
  • dash of Worcestershire sauce - 1 item
  • finely chopped onion - 2 Tbsp
  • poultry seasoning - 1/2 tsp
  • dry yeast - 2 pkg
  • warm water 110~ to 115~ - 1/4 c
  • Let stand 5 minutes
  • warm buttermilk - 2 c
  • shortening or melted butter or margarine - 1 c

How to make angel biscuits:

Dissolve yeast in warm water. Let stand 5 minutes. Stir in buttermilk, set aside. In a large mixing bowl combine flour, baking powder, soda and salt. Cut in shortening with a pastry blender until mixture resembles coarse meal. Stir in yeast and buttermilk mixture; mix well. Turn out onto a lightly floured surface. Knead lightly 3 to 4 times. Roll to 1/2-inch thickness. Cut with a 2 1/2-inch cookie cutter. Place on a lighlty greased baking sheet. Cover and let rise in a warm place about 1 1/2 hours. Bake at 450° for 8 to 10 minutes. Lightly brush tops with melted butter. Yields about 2 1/2 dozen.Sausage Gravy for Angel Biscuits:1 lb. sage flavored bulk pork sausage2 Tbsp. finely chopped onion6 Tbsp. all-purpose flour1 qt. milk1/2 tsp. poultry seasoning1/2 tsp. ground nutmeg1/4 tsp. salt dash of Worcestershire sauce dash of hot pepper sauce Crumble sausage into a large saucepan; cook over medium-low heat. Add onion; cook and stir until transparent. Drain, discarding all but 2 tablespoons of drippings. Stir in flour; cook over medium-low heat about 6 minutes or until mixture bubbles and turns golden. Stir in milk and seasonings; cook, stirring until thickened.
