Almond rice pilaf



  • butter or margarine - 1/2 c
  • Italian seasoning - 1 tsp
  • slivered almonds - 3/4 c
  • chopped green onions with tops - 3/4 c
  • uncooked regular rice - 1 c
  • sliced mushrooms, fresh or canned - 1 c
  • chicken broth or 2 3/4 c

How to make almond rice pilaf:

Melt margarine. Stir in rice, mushrooms, seasoning and green onions. Cook and stir over medium heat for about 10 minutes or until tender. Spoon into greased shallow 2 quart casserole. Cover and chill until ready to bake. (This part can be done a day ahead.) Heat oven to 325°. Stir in broth and almonds. Cover and bake for 1 hour. Let stand for 10 minutes before serving.
