Ingredients/Components
- cornstarch - 1 Tbsp
- oil - 2 Tbsp
- garlic powder - 1/4 tsp
- soy sauce - 2 Tbsp
- chicken broth - 1/2 c
- frozen peas - 1 c
- diced celery - 1 item
- small onion, diced - 1/2 item
- white wine - 1 Tbsp
- chopped almonds, toasted - 1/2 c
- raw chicken breasts, diced - 2 item
- each: sugar, salt and pepper - 1/2 tsp
- chopped mushrooms canned or fresh - 1/2 c
- to 6 diced water chestnuts - 4 item
How to make almond chicken:
Mix chicken with 2 tablespoons soy sauce, 1 tablespoon cornstarch, sugar, salt, pepper and garlic powder. Heat 2 tablespoons oil over high heat. Add chicken; toss fry until meat turns white. Add white wine, mushrooms, water chestnuts, onion and peas; stir-fry for 3 minutes. Add celery; stir another minute. Add the chicken broth; simmer, covered, for 5 minutes over low heat. Thicken pan juices with 1 tablespoon cornstarch mixed with soy sauce. Taste; correct seasonings as desired.
