  • cornstarch - 1 Tbsp
  • oil - 2 Tbsp
  • garlic powder - 1/4 tsp
  • soy sauce - 2 Tbsp
  • chicken broth - 1/2 c
  • frozen peas - 1 c
  • diced celery - 1 item
  • small onion, diced - 1/2 item
  • white wine - 1 Tbsp
  • chopped almonds, toasted - 1/2 c
  • raw chicken breasts, diced - 2 item
  • each: sugar, salt and pepper - 1/2 tsp
  • chopped mushrooms canned or fresh - 1/2 c
  • to 6 diced water chestnuts - 4 item

How to make almond chicken:

Mix chicken with 2 tablespoons soy sauce, 1 tablespoon cornstarch, sugar, salt, pepper and garlic powder. Heat 2 tablespoons oil over high heat. Add chicken; toss fry until meat turns white. Add white wine, mushrooms, water chestnuts, onion and peas; stir-fry for 3 minutes. Add celery; stir another minute. Add the chicken broth; simmer, covered, for 5 minutes over low heat. Thicken pan juices with 1 tablespoon cornstarch mixed with soy sauce. Taste; correct seasonings as desired. Add toasted almonds just before serving.
