Almond biscotti
Ingredients/Components
- sugar - 2 c
- vanilla - 1 tsp
- salt - 1/4 tsp
- flour
- water - 1 tsp
- almond extract - 1/2 tsp
- baking powder - 1 tsp
- 8 oz
- large egg yolks - 2 item
- large whole eggs - 4 item
- Egg Glaze:1 large egg
How to make almond biscotti:
Egg Glaze:1 large egg1 tsp. water In large electric mixer bowl, blend the flour, sugar, baking powder and salt until well-combined. In small bowl, whisk together the eggs, vanilla and almond extract. Add to flour mixture, beating until dough forms. Stir in almonds.Turn dough out onto lightly floured surface, knead briefly and divide into fourths. Butter and flour 2 large baking sheets. Flour your hands and form each piece of dough into a slightly flattened log (11-inches long and 2-inches wide). Place on sheets at least 3-inches apart. Brush with the egg glaze.
Bake in preheated oven at 350° for 35 minutes. Let cool on sheets for 10 minutes. Remove to cutting board and slice on the diagonal in 3/4-inch slices. Put the slices on the baking sheets and bake at 350° for 5 to 7 minutes on each side until they become pale gold. Cool on racks. Store airtight.
