Ingredients/Components
- milk - 1/4 c
- egg - 1 item
- bread crumbs - 1 c
- lean ground beef - 1/2 lb
- diced celery - 1 c
- seasoned salt
- large onion, chopped - 1 item
- canned tomatoes - 12 oz
- cans beef broth - 2 oz
- chopped cilantro - 1/3 1/2
- cubed zucchini - 1/2 c
- chorizo - 1/2 lb
How to make albondigas soup:
Soup:1 tsp. seasoned salt1 c. diced celery1/3 to 1/2 c. chopped cilantro1 large onion, chopped1/2 c. cubed zucchini2 (10 oz.) cans beef broth12 oz. canned tomatoes Meat Mixture: Combine ingredients; chill for 30 minutes.Soup: Combine all ingredients in large saucepan; cover and simmer for 15 minutes.
Shape meat mixture into 16 or more meatballs; add to soup. Cover and simmer for 45 minutes, or until meat is done. Correct seasoning with seasoned salt.
