Ingredients/Components
- water - 2 c
- vinegar - 1/2 c
- soy sauce - 1/2 c
- bay leaf - 1 item
- salt and pepper to taste - 1 item
- cloves garlic, crushed - 3 item
- chicken, cut up - 1 lb
- whole peppercorns - 6 item
- crushed ginger root - 1 tsp
- pork butt or ribs, cut up in 1-inch cubes - 1/2 lb
How to make adobo:
Place all ingredients, except chicken, in a pot and simmer, covered, for 15 minutes. Add chicken and simmer for another 15 minutes, until chicken is tender. Continue to simmer, uncovered, until liquid is reduced to about 1/4 cup. Serve hot over white rice.Recipe categories: Condiments, etc., Marinades and rubs, Caribbean.
